Quick Sorbet

2 cups frozen sliced peaches, bananas, nectarines, pears, apricots, or any berry.

Take fruit from freezer and defrost it briefly. It should still be firm and have ice crystals. In a blender, place the fruit and blend until desired consistency is reached.

Banana Nut Smoothie

1 Cup plain or flavoured soy milk

1 ripe banana (frozen bananas make it more like ice cream)

1 tbsp almond butter

Blend ingredients in a blender or with a hand mixer and enjoy a quick healthy high protein snack.

Old Fashioned Banana Bread

1-3/4 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon soda

3/4 teaspoon salt

1/3 cup shortening (or margarine)

2/3 cup sugar

2 eggs

1 cup mashed very ripe bananas (2 or 3, more to taste)

Sift flour, measure and resift 3 times with baking powder, soda, and slat. Cream shortening and sugar until light and fluffy.

Add eggs one at a time and beat well after each addition. Add bananas and mix. Add flour in 4 portions and beat until smooth after adding each portion.

Turn into a well-greased pan (8 x 4 x 2-1/2 inches) and bake in moderate oven (350 °F.) for 50 minutes or until bread tests done. Cool on rack before slicing.
